I started making pico de gallo with my mother when I was 10 or 11. We would pick tomatos from our garden and add some fresh vegetables with salt and pepper. As I got older, I began to experiment with spices and flavors. I settled on a recipe that was enjoyed by everyone I served it to and won many contests. This recipe later became known as my "OG" flavor. I have been using this recipe for decades. I have continued to experiment and have other flavors that are well liked. I started giving the salsa to family and friends. For years, the salsa was my calling card at every Christmas and family gathering. I began to sell the salsa at local markets to great success. Children and life relegated my salsa production back to family and friends. As the children have grown and the world changes I am now aiming at getting salsa to as many people as I can. We strive to get the salsa in your hands in the first 24 hours after it is made. the freshness usually lasts about 7-10 days in the refrigerator. when the salsa is at the end of its freshness, it can be used as a marinade for many dishes. The salsa can be used in many ways. The most common, of course, is with chips as a healthy snack. It is also very good as a condiment on many types of food.
